Prep table diagnostic checklist

Pick what you see, answer a few yes or no checks, and this checklist names the most likely reason your prep table is acting up, how urgent it is, and the exact spot in the troubleshooting guide that explains it.
It covers warm pans, a warm base, frozen lettuce, frost on the well walls, weak air at the vents and water under the table, on forced-air and cold-wall rails. Nothing you tap is stored or sent anywhere.
The checklist starts with what you see
Pick the one closest to what is in front of you. The checklist then asks one yes or no question at a time, in the order the troubleshooting guide lists the reasons.
Not sure which kind you have? Vents in the well mean a forced-air rail, and cold walls with no vents mean a cold wall. How to tell them apart.
Forced-air rails
- Warm food at the top of the pans, over a cold baseNow, for the food. This week for the cause
- Pans and base warm togetherToday if the food is warm
- Frozen food at the bottom of the pans or in the baseToday. Frozen produce is lost
- Weak air from the rail's vents, or ice on the coilWithin a day
Cold-wall rails
- Warm food in the rail, over a cold baseNow, for the food. This week for the cause
- Frost thickening on the well wallsWithin a day
- Lettuce frozen where it touches the wallsToday. Frozen produce is lost
Either kind: the base and the machine
The questions come from the troubleshooting guide, in its order
Every question comes from the checks on Prep table troubleshooting, and the checklist is built from the same file, so the two always match. It covers the ten symptoms and 40 reasons on that page.
The first yes is the most likely reason, and the result links straight to it. You can keep going to check the rest. If nothing fits, the checklist names the reasons only a technician can check, and the short list to run through before you call.
Every question can be answered without tools and without opening a panel. Leave refrigerant, panels and wiring to a technician, never chip ice, and unplug or switch off before cleaning near a fan.
For a health check when nothing is wrong yet, the guide also has a short list of checks for a healthy prep table.
