A short tutorial

Commercial ice machine maintenance

By Vimal Bhaya, Founder and Lead Systems Architect · Last reviewed 5 November 2026

A commercial ice machine needs three things to keep making clean ice: a clean and sanitize about every six months, a water filter changed on its date, and an air-cooled condenser kept clear.

Most faults an owner can fix start with one of those. These five pages take each job in turn, from the makers' own manuals.

The 5 parts, in order

By the end you will know how to clean and sanitize the machine, which cleaner suits its evaporator, when to change the filter, what to check before calling for repair, and what each way of getting it done costs.

  1. 1. How to clean a commercial ice machine

Empty the bin, clean, rinse, sanitize, wash the bin and throw away the first batches. Every six months for most big makers.

    Read part 1
  2. 2. Ice machine cleaner: nickel-safe or not, and which kind to use

Use the cleaner your manual names. Nickel-safe for a plated evaporator, any commercial ice machine cleaner for a stainless one. Never vinegar.

    Read part 2
  3. 3. Ice machine water filters: what they do, which kind, and when to change them

Sediment, carbon and a scale inhibitor, usually in one cartridge. Change it on its date or its gallons, whichever comes first.

    Read part 3
  4. 4. Commercial ice machine repair: what fails, and what to check before you call

Six checks before you call: power, the bin, the water, the room, the condenser and the code. What each symptom usually means.

    Read part 4
  5. 5. What commercial ice machine cleaning costs, in-house or by a service

About $150 to $300 a service visit, $44 of supplies in-house, or folded into a lease. Published prices, side by side.

    Read part 5

How to use this

Read them in order if you are starting from scratch. That is the usual path. If you already know which piece you need, jump to it from the list above.

A cube machine freezes water on a cold plate, then warms it to drop the ice

Every page here builds on this picture. The minerals left behind as the water freezes are the scale the cleaning removes and the filter slows.

An animated drawing of a cube ice machine making ice, seen from the front. In the freeze, a pump lifts water from the trough at the back to the distribution tube at the top, and the water runs down the cold evaporator plate behind the water curtain and freezes in layers, so the cubes grow thicker. Water that does not freeze runs back to the trough. In the harvest, the plate warms for a short time, the slab lets go, pushes the curtain open and falls into the bin as cubes, and the pile in the bin grows. After three harvests the pile reaches the bin control, and the machine stops until ice is taken out.

Common questions

How often should a commercial ice machine be cleaned?

Every six months for most models. Manitowoc, Scotsman and Ice-O-Matic give that interval, and Hoshizaki at least once a year for its KM cubers. Clean more often where the water is hard.

What are the main parts of ice machine maintenance?

A clean and sanitize about every six months, a water filter cartridge changed on its date or gallons, and an air-cooled condenser kept clear. Those three prevent most of the faults an owner sees.

Can staff do ice machine maintenance themselves?

Yes, with the manual and the right products. The makers' cleaning steps are written for it; a service company can do every other clean, or the jobs that take parts out.
